Apple Tarts are a simple yet elegant dessert made with flaky puff pastry and sweet, thinly sliced apples. These rustic tarts feature a crisp pastry base layered with almond meal, fresh apple slices tossed in lemon juice, maple syrup and cinnamon, then baked until golden and puffed.
Finished with toasted slivered almonds, fragrant rosemary and a drizzle of maple syrup, they deliver the perfect balance of sweet, nutty and aromatic flavours. Ready in under an hour and suitable for both oven and air fryer cooking, these puff pastry apple tarts are perfect for entertaining, afternoon tea or an easy dessert served warm with vanilla ice cream.
Ingredients
- 2 sheets Pampas Puff Pastry, just thawed
- 1 egg, lightly beaten
- 2/3 cup almond meal
- 2 red apples, quartered, cored, thinly sliced
- Juice of 1 small lemon
- 2 tbsp maple syrup +extra, to serve, if desired
- 1 tsp ground cinnamon
- ¼ cup slivered almonds, toasted
- 1 tbsp rosemary leaves
- Vanilla ice cream, to serve
Method
Method - Oven
- Preheat oven to 210°C (190°C fan-forced). Line 2 large oven trays with baking paper.
- Lay a sheet of thawed pastry on a clean surface. Cut pastry into 4 x squares. Leaving a 2cm border on each edge, prick the centre of the pastry with a fork. Brush with egg wash and sprinkle centre of pastry with almond meal.
- In a medium bowl, place apple slices and lemon juice. Toss to combine. Arrange apple slices, slightly overlapping, over the almond meal and fold the edge up over the filling, leaving filling exposed in the centre. Brush pastry with egg wash and brush apple with 1/4 of the maple syrup. Repeat process with remaining pastry and filling – you will end up with 8 tarts.
- Cook in the oven on the lowest rack for 20-25 minutes or until pastry is puffed and golden. Reduce heat during cooking if apple is burning. Remove from oven and brush with remaining maple syrup. Set aside to cool slightly.
- Sprinkle slivered almonds and rosemary over tarts. Drizzle with extra maple syrup, if desired, and serve with vanilla ice cream.
Method - Air Fryer
- Follow the original steps to prepare the apple tarts.
- Lightly spray the basket with oil or line it with air fryer-safe baking paper.
- Place the tarts in a single layer with at least 1–2 cm of space between each piece to allow the pastry to puff and crisp. Cook tarts in batches – don’t overcrowd the basket.
- Air fry at 180°C for 8-10 minutes until golden and puffed. Brush with remaining maple syrup. Set aside to cool slightly.
- Sprinkle slivered almonds and rosemary over tarts. Drizzle with extra maple syrup, if desired, and serve with vanilla ice cream.
