Chicken and Vegetable Sausage Rolls

Chicken and Vegetable Sausage Rolls are a lighter twist on a classic party favourite, made with flaky puff pastry and a flavour-packed chicken filling. Lean chicken mince is combined with grated zucchini, carrot and red onion, plus fresh parsley, panko breadcrumbs and Worcestershire sauce for a juicy, well-seasoned filling.
Wrapped in golden puff pastry and topped with sesame seeds, these homemade sausage rolls bake up crisp on the outside and tender inside. Perfect for entertaining, lunchboxes or easy snacks, they can be cooked in the oven or air fryer and are delicious served warm with tomato chutney and fresh salad leaves.
Ingredients
- 3 sheets Pampas Puff Pastry, just thawed
- 500g chicken breast mince
- 1 egg, lightly beaten + 1 extra, lightly beaten, to brush
- ⅔ cup (50g) panko breadcrumbs
- 1 medium zucchini, grated, liquid squeezed out
- 1 medium carrot, grated, liquid squeezed out
- ½ red onion, grated
- ¼ cup parsley leaves, finely chopped
- 1 tbsp Worcestershire sauce
- 1 tsp fennel seeds, toasted (optional)
- 1 tbsp sesame seeds (optional)
- Tomato chutney, salad leaves, to serve (optional)
Method
Method - Oven
- Preheat oven to 200°C (180°C fan-forced). Line 2 trays with baking paper.
- In a large bowl, combine mince, breadcrumbs, and egg. Add vegetables, parsley, Worcestershire sauce and fennel seeds. Season and mix to combine.
- Cut each pastry sheet in half lengthwise. Divide chicken mixture down the centre of each pastry strip in a log shape. Brush one edge of the pastry with egg wash and roll up to enclose the filling. Cut each log into 4 pieces, then place on trays. Brush with egg wash and sprinkle with sesame seeds if using. Chill for 15 minutes if time allows.
- Bake for 30-35 minutes or until golden brown. Serve warm with tomato chutney and salad (optional).
Method - Air Fryer
- Prepare and assemble sausage rolls as above.
- Lightly grease basket or line with air fryer-safe baking paper.
- Place sausage rolls in a single layer with at least 1–2 cm of space between each.
- Air fry at 180°C for 13–15 minutes in batches until golden. Serve warm with tomato chutney and salad (optional).
